A closed pressing system provides a smaller surface area through which juice can drain. Juice channels inside the drum deliver the juice to individual outlet nozzles on the outside of the drum, resulting in a slower, more pressurised release of juice. 

 

This is ideal for extracting flavours and tannins from skins, and for reducing the impact of of oxidisation on the juice.

An open pressing system is made up of a laser-cut, perforated surface through which grape juice can run freely and plentifully. This allows a more instantaneous collection of the first juice press. 

The open pressing system is therefore typically used by producers of sparkling wines. 

A dual pressing system consists of a laser-cut perforated surface like the open pressing system, but allows sealed juice channels to be mounted which cover the perforations. These channels feature outlet nozzles to which the juice is transported, as in the closed pressing system. 

This allows the winemaker to choose between pressing styles, which is particularly useful when producing different wine types.
